While capers, like our tiny Lilliput capers, are the un-ripened flower bud of the capparis spinosa bush that grows wild across the Mediterranean, caperberries are those buds left on the bush to blossom, for a bold flavor and pleasant crunch of seeds inside. You've probably come across them stemmed, but here you'll find only tears, to maximize the amount of zest in each jar.
