Holiday parties are a delight. Spending hours preparing for them is not. Luckily, Spanish romesco sauce is easy to make and goes with just about everything, so you can put together these three simple tapas in no time at all and get straight to the festivities. A meat, a fish, and a vegetarian option, because the more, the merrier.
Romesco sauce can be made ahead of time and stored in the refrigerator for up to a week.
Pulse the first 8 ingredients in a food processor until finely chopped. Then, with the motor still slowly running, add the olive oil with the same slow determination and continue to process until as smooth as desired.
